Marinate chicken in first 4 ingredients for about 1 hour. In wok, heat up vegetable stock (a few tablespoons) and ginger. Add chicken to hat stock, ginger, and stir fry tie done (for 4 minutes or so). Remove chicken and set aside. Add vegetable broth, heat, add spinach and scallions and stir fry tie done (about 2 min.). Add chicken and tangerines to the spinach and scallions stir fry 1 more minute and serve. Serves 4. Serve with brown rice. |
