Recipe of the Month

"Pritikin's Tangerine Chicken"

Ingredients

Preparation

  • ½ cup sake
  • ¼ cup brown rice vinegar
  • ½ cup orange juice
  • 2 slices of ginger chopped fine
  • 1 lb. chicken, lined and cubed, save skin
  • 4 scallions, chopped
  • ½ lb. spinach, preferably fresh
  • 3 tangerines, peeled and separated vegetable stock

Marinate chicken in first 4 ingredients for about 1 hour. In wok, heat up vegetable stock (a few tablespoons) and ginger. Add chicken to hat stock, ginger, and stir fry tie done (for 4 minutes or so). Remove chicken and set aside. Add vegetable broth, heat, add spinach and scallions and stir fry tie done (about 2 min.). Add chicken and tangerines to the spinach and scallions stir fry 1 more minute and serve. Serves 4. Serve with brown rice.
